Pilchard Curry

Ingredients
60ml cooking oil
1 onion, finely sliced
5ml Robertsons Garlic Flakes, soaked in boiling water and drained
1 tin diced tomatoes
5ml rajah hot curry powder
250ml water
1 Knorrox Chicken Stock Cube
3 fresh green chillies
1 green pepper, chopped
1 potato, peeled and diced
2 410g tinned pilchards in tomato sauce
Method
Heat oil and fry sliced onion and garlic flakes
Add tomato, curry powder, water, chicken stock cube and green chillies and simmer on low heat for five minutes, before adding green pepper and potato
Simmer for 10-15 minutes until your potato is cooked, then add the pilchards
Stir lightly, taking care not to break the fish
Cook slowly on low heat for another five minutes
Check your seasoning
Remove from the stove
Serve hot with freshly cooked rice, sambals and mixed salad
